Yes, I have gone gluten, dairy, refined sugar, grain free. I have been able to maintain the diet for over a year and have some success losing weight, though it has been slow. I have a low thyroid too so that impacts the weight loss also.
Anyway, I have found that eliminating these has improved the acne, hirsutism and especially bloating and digestive issues. I follow the paleo diet so if you use Pinterest you can search paleo recipes or there are a ton of paleo books. I also highly recommend the book by Dr. Fiona McCulloch, 8 Steps to Reverse Your PCOS. I don't follow the actual insulin count method she describes, but I do follow the principles of her nutrition program. She has a blog/website also that I like to follow.
Just a word of caution on the elimination of the foods, I tried to do it all at once and it was a miserable failure. I had to eliminate one food group at a time for a while before moving onto the next one. Doing it this way, I had much more success and was way less miserable.

I did low glycemic diet I followed the southbeach diet. I bought the book and it was really helpful to get started. Also just googling for recipes will bring up tons of them. I lost alot of weight when I did the diet. My energy was great. And overall felt better. I just found it really hard to stick to it. If you have time to meal prep that would be really helpful to stick with it. It was hard for me to find food choices if I didn't pack my own food. Good luck!

I haven’t tried this myself but I’m curious what you ended up doing. Did you eliminate any of those food groups? I see a lot of PCOS influencers/content creators suggesting a gluten-free and dairy-free diet, but not any doctors or medical studies.
