I have headaches too, ive quit drinking coffe for 3 months. It was a bit less, but not much.

Coffee stimulate adrenaline to give you the energy of the fight or flight response. Adrenaline increases your cortisol levels (stress hormone ) with pcos it’s difficult to get cortisol levels to decrease which can cause anxiety and exhaustion (adrenaline fatigue)

It sounds to me like you may be suffering from adrenaline fatigue. X

Both my fiance and I have agreed that the headaches is possibly stess related not sure about the tiredness.
